  • one teaspoon of vanilla extract
  • one and a half all-purpose flour
  • one teaspoon of baking soda

  • one teaspoon of baking powder
  • one teaspoon of ground cinnamon
  • Three large bananas that are very ripe
  • One teaspoon of grounded nutmeg
  • 6 tablespoons of unsalted butter or melted coconut oil
  • Optional: one cup of chocolate chips, pecans, or chopped walnuts.

Instructions

  • ❖      Preheat the oven until it’s 218 degrees Celsius. Then spray your muffin pan using nonstick spray or you can use cupcake liners as an alternative.
  • In a medium bowl, whisk your baking powder, cinnamon, nutmeg, flour, salt, and baking soda together, and then set it aside. Mash your bananas inside a large bowl. Whisk your melted butter, vanilla extract, brown sugar, milk, and egg using medium speed. Into your wet ingredients, pour your dry ingredients. Whisk them together until they are combined. If you are adding chocolate chips or even nuts, put them in now. You will notice that your batter is thick at this point.
  • Fill your batter into the liners till the top. At 425 degrees, bake them for five minutes, while still in the oven; reduce the temperature until 177 degrees. Bake your muffin for an additional sixteen to eighteen minutes. If not sure about the minutes, you can insert a toothpick into the muffin, and if it comes out clean know that your muffins are ready. In the muffin pan, you can then allow your muffin to cool down for around five minutes then transfer them to a wire rack so that they can continue cooling down.
  • So that your muffins can stay fresh, cover them at room temperature for several days. If you want them to last longer, put them in a refrigerator.
