BREAD PUDDING RECIPE (WITH CBD)

Method

Step 1

Put 500g whole meal or white into a sizeable bowl and add 500 g mixed dried fruit, 1 ½ mixed spice, and 85 g mixed peel.

Step 2

Add 600 ml of milk and CBD to the mixture, scrunch through the fingers to mix everything, or stir to mix well and break up the bread completely.

Step 3

Add 2 sizeable eggs, 140 g light muscovado sugar, and zest of 1 or 2 lemons if considered. Stir it properly, then set it aside for about 20 minutes to allow the soaking.

Step 4

Heat is through the oven at 180/160C fan/gas 4. Line and butter the base of a 20cm non-stick cake tin of your shape.

Step 5

Stir the melted butter into the mixture, tip into the tin, and scatter with demerara.

Step 6

Bake for about 1 hour until firm and golden. Cover it with foil to allow it to brown clearly. Turn out of the tin and remove the paper.
