STEAMED PUDDING RECIPE (WITH CBD)

Steamed puddings are simple to make and normally need few ingredients, and the results of a moist crumb are assured. Its ingredients are low-cost, or even it can use leftover ingredients from other dishes.

Equipment

  • A pudding basin
  • A sheet of foil
  • A large pan with a lid
  • A large sheet of baking paper, larger than the rim of the pudding basin
  • Kitchen string
  • An upturned saucer (anything to keep the pudding basin away from the bottom of the pan)

Ingredients

  • 175 g softened butter
  • 115g breadcrumbs
  • 60 g flour
  • 60g sultanas
  • 115g currants
  • 115g brown sugar
  • 115g raisins
  • 30g flaked almonds
  • 60g candied peel
  • 3 eggs
  • ½ cup lemon or orange juice
  • 2 tablespoon whiskey
  • 2 drops of CBD oil
  • 1 acidic apple, peeled and sliced
  • ½ teaspoon mixed spice

Instructions

  • Grease your pudding basin generously with the butter.
  • Boil a kettle of water. Put a closely fitting, upside-down bowl at the bottom of a large, deep saucepan, large enough to support the pudding.
  • Mix the dry ingredients and prepared fruit in a large bowl and blend well. However, don’t overwork the mix.
  • Whisk the eggs, add the lemon or orange juice and the whiskey to the dry ingredients, and blend.
  • Leave overnight
  • Place your pudding mixture in the pudding basin.  Envelop with greased paper followed by foil.
  • Tie the edges of the bowl tightly with a string.
  • Gush in enough hot water to fill half the side of the pudding basin.
  • Steam for hours over medium heat.
  • Envelop the pan with a tight-fitting lid, and reduce the heat to a mild simmer. Top up the boiling water if the level reaches too low.
  • Confirm if the pudding is ready by pressing a toothpick through the foil and parchment lid into the middle of the pudding. If the toothpick is wet, put the pudding back into the steamer for about 20 minutes, and confirm again. Unravel and spin the pudding onto a plate once cooked.
  • Let it cool after steaming. After the pudding is chilled, store it in a dry place.
  • You can top the pudding with brandy or whiskey for more flavor.

Notes on Steaming a Pudding

 According to China et al.  (2019), the followings are things to note: avoid overfilling the pudding basin. Leave about 2or 3cm space between the rim and the mixture. The water should be halfway up the side of the bowl when you place the pudding basin in the saucepan. This ensures that your pudding cooks correctly.

How Do You Tell The Pudding Is Cooked?

Insert a toothpick through the foil and paper into the middle of the pudding. Jiggle the skewer to make the foil and paper hole larger than the toothpick and withdraw. If the toothpick comes out clean, then the pudding is ready. If it doesn’t come out clean, put the pudding back into the basin to continue cooking for about 20 minutes. It’s great to know that you can’t necessarily overcook a steamed pudding. However, don’t over-extend the time since although the pudding won’t become dry, other ingredients may destroy it when overcooked.

Steaming a Pudding in the Oven

  • Pour boiled water in a roasting tin until halfway and put a metal rack on top. Place the shielded pudding on the rack.
  • Shelter the pudding using a foil tent to arrest the steam, then cook for about 1 ½ hour on medium heat. (About 350 F)
  • Repeatedly inspect the water as you cook and fill it up when needed.

Ways of Storing a Steamed Pudding

Steamed pudding has self-rising flour, which is an active element, thus target immediately after you’ve readied it. Being unable to finish it should not worry you. You can cover the remains using cling film and store them in the refrigerator.  Normally, it should go for a couple of days but might become drier as time passes. You can reheat it in the microwave for about 2 minutes to warm it. It’s possible to freeze a steamed pudding in an airtight package and then mildly reheat it if desired.
