It might be the perfect dinner party dessert as it looks like you’ve poured all your efforts in, giving everyone their pudding. Even more, is the healing power of cannabis in your pudding. This recipe is super easy and might be one of your favorite.

What Is Sticky Toffee Pudding?

Ironically, it is not similar to pudding as it is famously known. However, it’s the term used to refer to a savory or sweet meal that’s boiledor steamed. Originally, sticky toffee pudding was steamed; now, they are mostly baked and garnished with whipped cream or vanilla ice cream for a cool, creamy contrast to the rich, caramel-topped pudding cake. Sticky toffee pudding is a classic English dessert with a warm, buttery sponge cake dotted with chunks of sticky dates and topped with a thick, velvety toffee sauce.Although the cake is delicious, the delectable toffee sauce makes it extraordinary.

CBD in Sticky Toffee Pudding

CBD is short for cannabidiol and is a chemical compound found in cannabis and hemp. CBD lacks the psychoactive properties of THC (tetrahydrocannabinol). In other words, it does not get users high; according to Donvito et al. (2018),it is purported to have a myriad of health benefits such as inflammation mitigation, acne reduction, pain alleviation, and anxiety alleviation. There have not been many mainstream studies on CBD; they haven’t been approved by the Food and Drug Administration (FDA)for medical purposes and can have adverse side effects such as dizziness, so talk to your doctor before trying them out. Normally, this dessert is served warm with the sauce sprinkled on top, together with custard or some vanilla ice cream. However, a day or so of soaking in the toffee makes them sweeter. If not eating thepuddings immediately, sprinkle half of the toffee sauce into an oven-safe dish and the rest on the cakes, cover them with foil and place them in the oven.The toffee sauce will soak into them as they cool, and become sticky, thus the name. Freeze the dish in the fridge or store it in the fridge, and when you’re ready to enjoy them, you can always reheat it in the oven before serving. It’s good to store additional sauce to serve for extra delightfulness.

Serves; 4

Ingredients for the Sauce

  • 1 ½ cup heavy cream
  • ¼ cup unsalted butter softened
  • ½ cup light brown sugar
  • ½ molasses, or golden syrup
  • 25g CBD-infused butter

For The Cake

  • ½ cup pitted dates
  • ¼ cup of water
  • ½ cup plain flour
  • ½ teaspoon baking powder
  • ½ teaspoon bicarbonate soda
  • A pinch of salt
  • ½ teaspoon vanilla extract
  • ¼ cup granulated sugar
  • 3 tablespoons unsalted butter
  • 1 large egg
  • Whipped cream for serving (optional)

Procedure

  • Preheat the oven to 350 F and lightly oil an eight-inch round baking dish or cake pan with non-stick spray or butter
  • Prepare the sauce. Into a large saucepan over medium heat, add the heavy cream, brown sugar, CBD-butter, and molasses, and stir to blend.
  • Bring the sauce mixture to a boil, stirring until the sugar has dissolved.
  • Reduce the heat to medium-low and continue stirring while cooking the sauce until it has thickened and turned a deep brown color, for about 10 minutes
  • Pour half of the toffee sauce into the bottom of the greased baking dish, and transfer the remaining sauce to a bowl.
  • In a medium saucepan over medium heat, combine the dates and the water and cook until the dates have absorbed most of the liquid, for about 10 minutes.
  • Transfer the dates to a food processor or blender, and puree the fruit mixture until smooth
  • While the dates are cooking, whisk together the flour, baking powder, baking soda, and salt
  • in a medium bowl.
  • Mix the sugar and butter in a medium dish until fluffy, for about 3 minutes. Use a hand or stand mixer to cream the ingredients into the proper texture.
  • Add the egg, vanilla extract, and date blend to the butter and sugar mix and whisk to blend.
  • Add the dry ingredients to the batter into the baking dish on top of the toffee sauce.
  • Gush the batter into the baking dish on top of the toffee sauce
  • Transfer the baking dish to the oven and bake until a skewerthrough the middle of the pudding comes out clean, about 40-45 minutes
  • Remove the pudding from the oven and let it cool slightly before serving
  • While the pudding is cooling, reheat the remaining toffee sauce in the microwave or a small saucepan over medium-low heat
  • Scoop slices of the pudding into individual serving bowls and top with a heaping spoonful of the warm toffee sauce and a dollop of whipped cream before serving

Conclusion

This dessert may not be vegan friendly due to the eggs and cream. You can add warm spices like cinnamon, cloves, and nutmeg to your cake batter to spice up the flavor profile of this classic dessert. You can incorporate nuts like walnuts and pecans for a slight crunch. Mix other dried fruits like raisins, dried apricots, and figs for a fruitier cake. Also, you can use dark brown sugar in the sauce for a more molasses-forward flavor. You can prepare this dessert before you want to eat it. To prepare in advance, avoid adding the layer of sauce at the base of the dish, bake the cake per the instructions, and drizzle half of the toffee sauce over the dish before wrapping it in plastic wrap and storing it in the refrigerator for up to 3 days. When you want to serve, reheat the pudding for 10 minutes in a 350 F oven and drizzle the other half of the toffee sauce over the top before serving.
