While fruits and vegetables are known to reduce inflammation due to numerous antioxidant content, some may have the same effect. For example;
The nightshade family
The nightshade family composes vegetables, including potatoes, eggplants, and tomatoes. Anecdotal reports suggest that these vegetables have a solanine chemical said to increase inflammation and arthritis pain. But there is still no scientific back up to confirm this information. I always advise my clients to stay away from such vegetables if they realize pain in the joints after consumption.
Method used to cook vegetables
The cooking method used is important in keeping nutrients in foods. I always prefer steaming my vegetables to boiling, which help preserve nutrients. I also advise people to use limited water amounts when cooking to retain the nutrients. Also, be careful about the oil types used if you choose frying because they can produce phytochemicals and possibly increase inflammation.
