In my opinion, the vitamin K in asparagus supports bone health in 2 ways, it prevents bone loss especially as you age by replenishing the worn out tissues and cells in the bones. It also facilitates absorption of calcium nutrients which play an essential role in maintaining healthy bones.

Asparagus may be beneficial for blood sugar management. What nutrients in asparagus are responsible for this effect? What are the nutrients doing in the body? (i.e., what’s happening on a cellular level)

From my studies, asparagus can help in blood sugar regulation. Its high un proteins, potassium, antioxidants, and other minerals which promote insulin production speeding the process of conversion and absorption of sugars to glucose, enhance secretion of salt and urine which eventually help in blood sugar management.

Yes, you can consume asparagus raw. However, raw, asparagus has a tough texture compared to the cooked version. Cooking it provides a better flavor packed with more benefits to the body.
