How Is Instant Coffee Made? How Is It Different from Freshly Ground?

Freeze-drying is one of the two methods of producing instant coffee. The other method is spray drying. Freeze-drying involves roasting, grinding, and dissolving coffee beans into hot water. The mixture is then filtered, leaving behind a highly concentrated liquor. The liquor is chilled at a temperature of -20 degrees Celsius, resulting in tiny pieces of coffee. These newly formed but frozen pieces of coffee are then placed in a drying vacuum set at a temperature of about -40 degrees Celsius, forming our beloved solid soluble coffee (Instant coffee).

Ground coffee does not dissolve in water. For this reason, you may want to brew it first and then filter it to get a highly concentrated liquor.
